Who am I?

I'm Sophie! An English Litterature student at Boston College, a passionate believer in taking care of yourself, a fan of chocolate, pumpkin spice latte and shopping. In my free time, I like to hang out with my girlfriends and most importantly, I love to blog! Look around and feel free to contact me at withlovefromsophie@blogger.com <3

The cutest pasta you ever in your life will make

Heey girlies ! How have you been? I can't believe it's been like more than a week since I shared a recipe-but I haven't been cooking a lot lately :( Honestly, I have so mixed feels about that because to me, cooking is taking care of myself and not doing that for a week is just bad, full stop. There should be time for that every. single. day. But back on track! I'm ready to take care of me again and more importantly, I'm ready to share with you lovelies how I've been doing that.

Because what's the best way to show yourself some much-needed love?
That's right. Pasta.

Pasta is always the answer.

Now, I'm not talking about store-bought pasta. That can be very good, but not good enough for this mid-week self-love boost. No, I'm talking about the cutest pasta you ever in your life will make, and the best thing about this is that its super duper easy.

It does require a pasta machine or a lot of cleaning afterward, and that's just taking time away from more self-love (Read: Netflix and chocolate). Honestly, when I got a pasta machine for Christmas last year I thought that was just my parents' acceptance of that they don't know what to get me anymore, but it turned out I was completely wrong. I've used it so often since that I've wondered how I ever managed to live without! Now I'm thinking if they only got me one to get me to make pasta for them, but... I'm going with that they knew me so much better than I ever could have imagined.

Anyway-back to the pasta. Super easy and I've tested heard that it's really good with Pinot Noir red wine if any of you girls want to add that! Otherwise, I totally think you should serve parmesan, mozzarella - all the cheese really, with it, and maybe something like salmon or chicken with it that you can just throw in the oven or on a pan while you're busy making the pasta. It might not be your greenest meal ever but #treatyoself, am I right?

Actually to the pasta!

You will need:
1 egg
1/2 teaspoon salt
1 cup all-purpose flour, plus extra for kneading
2 tablespoons water

Equipment:
Preferably a pasta machine, otherwise a hand roller and a knife
Medium-sized bowl
Tablespace

Directions:
1. Combine the flour and salt in a medium-sized bowl
2. Make a well in the flour
3. Slightly beat the egg and put in the well
4. Mix the egg and the flour/salt mixture until it's stiff. Add water if needed
5. Lightly flour the table
6. Take dough from bowl and put on table
7. Knead for 3-4 minutes
8. Roll out on either pasta machine or use hand roller to desired thickness (I recommend 0.25 inches)
9. Cut out in desired sizes (I recommend 10 inches long pieces for spaghetti.)

And there you have it. Delicious, easy, quality pasta made by you for you.

Enjoy!

With love from Sophie <3
